A menu inspired by the place we're lucky enough to call home.

For A Surrealist Dinner, Marco Cataldo returns to the Palazzo with a deeply personal interpretation of Puglia — shaped by the flavours he grew up with in Parabita, the kitchens he has worked in abroad, and the experience he gained alongside Michelin-starred chefs.

Marco’s cooking is rooted in this land, but never limited by it. He takes familiar ingredients, memories and traditions and looks at them with a fresh eye — lighter, more curious, sometimes unexpected, but always recognisably connected to the south.

For this dinner, that vision comes together around one long table in the Palazzo. The menu is designed to be shared, passed from one person to another and enjoyed slowly, with each dish revealing a different side of Marco’s idea of Puglia Surrealista.

There will be ingredients you know, flavours you recognise, and combinations that might make you look at them differently.

Not quite traditional. Not interested in being modern for the sake of it.

Just a generous, intimate dinner with the south at its heart — seen through Marco’s eyes, shaped by where he has been, and brought back home to Parabita for one October evening.
