Kate Matheson arrived in Parabita only a few months ago, but food has been taking her places for much longer. From London brunch counters to Lisbon pop-ups, from Sri Lankan and Indian spices to Pugliese tradition, she cooks food that tells a story, nourishes the body, and brings people together.
For one night only, she brings that journey to the Palazzo for one evening only.
Expect three courses of Sri Lankan and Indian spices, smoke, herbs and citrus, each with its own distinct flavour, each made for sharing. The inspiration comes from a lifetime of travel and exploration into the flavours found there. The setting is unmistakably ours: one long tavolata, plates moving round the table, house wine being poured, and an evening built for people to settle in and stay.
A little island heat. A little southern Italian ease. A lot of flavour in between.
