THE LAST TAVOLATA WITH MARCO

Marco Cataldo was born in Parabita, but his kitchen was shaped far beyond it. 

After working abroad and spending time in the kitchens of acclaimed Michelin-starred chefs, Marco came back south carrying new techniques, new references and an even stronger attachment to the place he comes from. 

His cooking is rooted in Puglia, but never trapped by it. Familiar ingredients are treated with lightness, curiosity and a point of view that feels entirely his own. For The Last Tavolata, that approach becomes something even more relaxed. We are at the end of the season. 

The long summer is behind us, the calendar is finally getting quieter, and this evening is simply about letting go a little. Marco brings his final vision of Puglia Surrealista to the table through an informal apericena built around sharing, easy flavours and dishes that are meant to move around the table rather than arrive with too much ceremony.

No fuss. 

No rigid structure. 

No need to rush. 

Just one long table, plates to pass around, wine to pour, music in the background and the kind of atmosphere where people settle in, talk to whoever is next to them and stay longer than they expected. It is less about closing the season properly and more about enjoying the fact that, for one last evening, we are all still here.
